The Bain Marie alembic has a water bath recipient inserted inside the main pot and is particularly recommended for distilling various essential oils, herb infusions, or different fruit brandies. It is also highly used for making rose water. Fruit mashes can easily burn when in contact with direct heat which can leave any resulting distillates with an unpleasant aftertaste. With this alembic heat transfers through the hot water in the outer chamber of the still, keeping the temperature in the inner chamber under 100º Celsius, which is ideal for the distillation of fruit mashes and herbs. The distillation process may take longer when using these systems but the result will be of higher quality with just one go.
